- 300 grams raw shrimp, peeled and deveined
- 1 cup fresh pineapple chunks
- 2 large eggs, beaten
- 1 cup chopped bell peppers
- 3 green onions, sliced
- 3 garlic cloves, minced
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 2 tablespoons vegetable oil
- 1 teaspoon curry powder
- 1/2 cup cashews
Instructions
- Heat a large skillet or wok over medium-high heat.
- Add oil and sauté garlic until fragrant.
- Add shrimp and cook until pink, then set aside in the pan.
- Push shrimp aside and scramble the beaten eggs.
- Add rice, bell peppers, and pineapple, stirring well.
- Pour in soy sauce, fish sauce, and curry powder, mixing thoroughly.
- Add cooked shrimp back in and toss everything together.
- Finish with green onions and cashews, then serve warm.
