Description

A vibrant and flavorful fried rice dish combining juicy shrimp, sweet pineapple, and aromatic jasmine rice with a perfect balance of savory and sweet flavors.


Ingredients

  • 3 cups cooked jasmine rice (chilled)
  • 300 grams raw shrimp, peeled and deveined
  • 1 cup fresh pineapple chunks
  • 2 large eggs, beaten
  • 1 cup chopped bell peppers
  • 3 green onions, sliced
  • 3 garlic cloves, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 2 tablespoons vegetable oil
  • 1 teaspoon curry powder
  • 1/2 cup cashews

Instructions

  1. Heat a large skillet or wok over medium-high heat.
  2. Add oil and sauté garlic until fragrant.
  3. Add shrimp and cook until pink, then set aside in the pan.
  4. Push shrimp aside and scramble the beaten eggs.
  5. Add rice, bell peppers, and pineapple, stirring well.
  6. Pour in soy sauce, fish sauce, and curry powder, mixing thoroughly.
  7. Add cooked shrimp back in and toss everything together.
  8. Finish with green onions and cashews, then serve warm.

Notes

  • Use day-old rice for best texture
  • Do not overcook shrimp to keep them tender
