Description

A vibrant and flavorful spicy pineapple fried rice packed with juicy pineapple, fluffy jasmine rice, colorful vegetables, soft scrambled eggs, and a delicious spicy savory sauce. Perfect for quick dinners, meal prep, or a tropical-inspired comfort meal.

  • 4 cups cold cooked jasmine rice
  • 1 1/2 cups fresh pineapple chunks
  • 3 large eggs
  • 1 medium red bell pepper, diced
  • 4 green onions, sliced
  • 3/4 cup frozen peas
  • 3 garlic cloves, minced
  • 3 tablespoons soy sauce
  • 1 tablespoon sriracha sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • 2 red chili peppers, thinly sliced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat a large skillet or wok over medium-high heat.
  2. Prepare all vegetables, pineapple, sauces, and seasonings before cooking.
  3. Add vegetable oil to the skillet and sauté garlic for 30 seconds until fragrant.
  4. Push garlic aside and scramble the eggs until softly cooked.
  5. Add red bell pepper, peas, pineapple chunks, and green onions to the skillet.
  6. Stir in the cold jasmine rice, soy sauce, sesame oil, sriracha sauce, salt, and black pepper.
  7. Toss continuously for 5 to 7 minutes until everything is heated through and lightly toasted.
  8. Add sliced red chili peppers and allow the pineapple to caramelize slightly.
  9. Serve immediately while hot.

Notes

  • Use day-old cold rice for the best fried rice texture.
  • Fresh pineapple provides brighter flavor than canned pineapple.
  • Adjust the spice level by reducing or increasing the chili peppers and sriracha.
  • Store leftovers in the refrigerator for up to 4 days.
