- 500 grams chicken thighs, cut into pieces
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon curry powder
- 1 teaspoon paprika
- 1 cup coconut milk
- 2 tablespoons tomato paste
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh cilantro, chopped
Instructions
- Heat a skillet over medium heat.
- Season chicken with salt, pepper, and half the curry powder.
- Melt butter in the skillet.
- Add garlic and ginger, cook until fragrant, then stir in tomato paste, paprika, and remaining curry powder. Add chicken and coat well.
- Pour in coconut milk and simmer for 20 minutes until chicken is cooked and sauce thickens.
- Adjust seasoning and add fresh cilantro.
- Serve warm and enjoy.

- Use full-fat coconut milk for best texture.
- Simmer longer for thicker sauce.
- Add chili flakes for extra heat.
