Description

A creamy and flavorful Thai-inspired butter chicken made with tender chicken, coconut milk, and warm spices.


Ingredients

  • 500 grams chicken thighs, cut into pieces
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon paprika
  • 1 cup coconut milk
  • 2 tablespoons tomato paste
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. Heat a skillet over medium heat.
  2. Season chicken with salt, pepper, and half the curry powder.
  3. Melt butter in the skillet.
  4. Add garlic and ginger, cook until fragrant, then stir in tomato paste, paprika, and remaining curry powder. Add chicken and coat well.
  5. Pour in coconut milk and simmer for 20 minutes until chicken is cooked and sauce thickens.
  6. Adjust seasoning and add fresh cilantro.
  7. Serve warm and enjoy.

  • Use full-fat coconut milk for best texture.
  • Simmer longer for thicker sauce.
