Description

  • 1 cup all purpose flour
  • 1/2 cup rice flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup coconut milk, divided
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
  • 3 cups vegetable oil for frying
  • 1/4 cup crushed peanuts
  • 1 tablespoon red chili slices (optional)
  • 1/4 cup shredded coconut

Instructions

  1. Heat vegetable oil in a deep frying pan over medium heat until hot.
  2. In a mixing bowl, whisk together all purpose flour, rice flour, baking powder, salt, 1/2 cup coconut milk, vanilla extract, and enough water to create a smooth batter.
  3. Peel the bananas and cut them in half lengthwise if desired.
  4. Dip each banana piece into the batter until evenly coated.
  5. Carefully place the bananas into the hot oil and fry for 3 to 4 minutes per side until golden brown and crispy.
  6. Transfer fried bananas to a wire rack or paper towel lined plate to drain excess oil.
  7. In a small saucepan, combine remaining coconut milk and brown sugar. Heat gently until smooth and slightly thickened.
  8. Drizzle the coconut glaze over the warm fried bananas.
  9. Top with crushed peanuts, shredded coconut, and optional chili slices.
  10. Serve immediately while warm and crispy.
