Instructions
- Heat vegetable oil in a deep frying pan over medium heat until hot.
- In a mixing bowl, whisk together all purpose flour, rice flour, baking powder, salt, 1/2 cup coconut milk, vanilla extract, and enough water to create a smooth batter.
- Peel the bananas and cut them in half lengthwise if desired.
- Dip each banana piece into the batter until evenly coated.
- Carefully place the bananas into the hot oil and fry for 3 to 4 minutes per side until golden brown and crispy.
- Transfer fried bananas to a wire rack or paper towel lined plate to drain excess oil.
- In a small saucepan, combine remaining coconut milk and brown sugar. Heat gently until smooth and slightly thickened.
- Drizzle the coconut glaze over the warm fried bananas.
- Top with crushed peanuts, shredded coconut, and optional chili slices.
- Serve immediately while warm and crispy.
