Description
Crispy golden fried bananas made with a light coconut batter, inspired by Thai street food and served warm with maple syrup or vegan caramel sauce.

- 4 medium firm ripe bananas, peeled and sliced lengthwise
- 3/4 cup rice flour
- 1/4 cup all-purpose flour
- 3/4 cup coconut milk
- 2 tablespoons granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 tablespoons shredded coconut, optional
- 1 tablespoon sesame seeds, optional
- 3 cups neutral oil, for frying
- 1/4 cup maple syrup or vegan caramel sauce, for serving
Instructions
- Heat the neutral oil in a deep skillet or heavy pot to 350°F.
- In a mixing bowl, whisk together the rice flour, all-purpose flour, sugar, baking powder, salt, shredded coconut, and sesame seeds.
- Pour in the coconut milk and whisk until the batter is smooth and thick enough to coat the bananas.
- Place a wire rack over a baking sheet near the stove.
- Dip each banana slice into the batter until evenly coated.
- Carefully lower a few coated banana slices into the hot oil.
- Fry for 2 to 3 minutes per side, turning gently, until golden brown and crisp.
- Transfer the fried bananas to the wire rack and let them rest for 1 to 2 minutes.
- Serve warm with maple syrup or vegan caramel sauce.
Notes
- Use firm ripe bananas so they hold their shape while frying.
- Do not overcrowd the pan, or the coating may turn soft.
- Serve right away for the crispiest texture.
- If the batter feels too thin, add 1 tablespoon of rice flour at a time.
