- 14 ounces firm tofu, cubed
- 1 can coconut milk (400 ml)
- 2 tablespoons green curry paste
- 1 cup vegetable broth
- 2 cups cooked white rice
- 1 small red chili, sliced
- 1 handful fresh cilantro, chopped
- 2 tablespoons oil
- 2 cloves garlic, minced
- 1 tablespoon lime juice
Instructions
- Heat oil in a nonstick pan over medium heat.
- Add tofu cubes and cook until golden on all sides.
- Add minced garlic and cook briefly until fragrant.
- Stir in green curry paste.
- Pour in coconut milk and vegetable broth.
- Simmer gently for 10 to 12 minutes until slightly thickened.
- Add lime juice and adjust seasoning.
- Serve over cooked rice and garnish with chili and cilantro.
Notes
- Press tofu before cooking for best texture
- Adjust spice level by modifying curry paste amount
- Add vegetables like bell peppers or broccoli if desired
