Description

A creamy and comforting vegetarian Thai green curry with golden tofu, fragrant herbs, and a rich coconut sauce served over fluffy rice.


Ingredients

  • 14 ounces firm tofu, cubed
  • 1 can coconut milk (400 ml)
  • 2 tablespoons green curry paste
  • 1 cup vegetable broth
  • 2 cups cooked white rice
  • 1 small red chili, sliced
  • 1 handful fresh cilantro, chopped
  • 2 tablespoons oil
  • 2 cloves garlic, minced
  • 1 tablespoon lime juice

Instructions

  1. Heat oil in a nonstick pan over medium heat.
  2. Add tofu cubes and cook until golden on all sides.
  3. Add minced garlic and cook briefly until fragrant.
  4. Stir in green curry paste.
  5. Pour in coconut milk and vegetable broth.
  6. Simmer gently for 10 to 12 minutes until slightly thickened.
  7. Add lime juice and adjust seasoning.
  8. Serve over cooked rice and garnish with chili and cilantro.

Notes

  • Press tofu before cooking for best texture
